There once was a distillery attached to the Enmore Sugar Factory in Guyana. Though there were many stills in that country 75 years ago, one in Enmore was unique and celebrated. What makes it unique? It was a wooden still first of all and of a very specific design, known as a Coffey Still, designed by Coffey & Company. Enmore Sugar Factory is no more. The still has been moved and is under the control of El Dorado, the last remaining rum distiller in Guyana. It is the last operating wooden column still in the world and the world's oldest operating Coffey still. The lads at Duncan Taylor, got their hands on this rum from 1985 (before the demolition of Enmore) and aged it in Scotland's cool glens for 27 years.
