Australian Black Truffles are every bit as good as French Black Truffles in winter. Because the earth is round, it is now winter in Australia and their black truffle season is in full swing.
Taking advantage of the spherical nature of this 'big blue marble' and its orientation relative to the sun, we get to have black truffles in summer. That means you can have them on your Taku River Salmon. We're all about utilizing our local food shed. We are also occasionally about going to opposite ends of the earth to make unique and remarkable things happen.
Add 5 grams of Truffle to any dish for $35 The Taku River Salmon in Stage Left and the Garganelli with Truffle Cream Sauce in Catherine Lombardi are excellent candidates. Lobsters are running great right now and Chef JR loves to pair these Australian Truffles with Lobster in summer.
