White truffle season usually ends some time in late December or early January. Black truffles enter the scene just as whites go away. It is our tradition, whenever there is crossover, to put out a tasting menu in the week between Christmas and New Year, which features both. Black and white truffles are quite distinct. The aroma is slightly different and the applications are different as well. We're more likely to put a black truffle into a dish, like under the skin of a bird while still cooking, where white truffles are shaved on top of a dish after it's finished. If you're free between the holidays, it's a great chance to experience one of the great pleasures of nature.
