For this week's project, we will open two bottles.
Located at the bottom of Quittin’ Time Ski Run and next to the Town Lift, High West Distillery & Saloon is the world’s first and only ski-in gastro-distillery.You can find High West just one block off historic Main Street. It's a distillery and a pub with a traditional copper pot still glowing in the front window, "Spirits”, “Whiskey”, and “Victuals” neon signs and feet-stomping American roots music. Now High West is an interesting proposition. As they've been open since just 2007, you may well wonder how this 21-Year whiskey exists. While they do distill some of the products they sell, they purchase and blend barrels for the older stuff. While they could be more forthright in their marketing, they are very good blenders and this rye is delicious.
Almost all American whiskey is aged in new oak and sold as a "straight" whiskey. Used barrels result in a taste profile less influenced by the wood, allowing the more delicate flavors of the rye distillate to prevail. A truly sophisticated sipping whiskey. This particular 21 Year-Old is distilled from rye mash, stored 21 years in re-used cooperage. 53% Rye 37% Corn 10% Malted Barley.
In a rather interesting departure, tonight and all weekend (while supplies last), we're offering an ounce of High West 21 for $4
We're also offering a High West 21- Year Whiskey Sour for $10.
Some high end spirits show very well in cocktails. This is an example.
