Prohibition was such a bad idea. During those dark dry days, Americans mostly didn't have trouble acquiring liquor. But to be in a place once again where it was normal and acceptable and legal? That took a little more doing. Our friend David Wondrich wrote a wonderful piece in the fall issue of Saveur Magazine, describing one such haven within striking distance of our shores. Dirty Dick's Brass Rail was a bar on the island of Nassau (just one bumpy boat ride off the coast of Florida). It was full of great spirits of all kinds and manned by expert barmen whose trade had been made illegal in their native country. David points out that there were exceptions. Good old American rye was in short supply even there, because it had been cut off at the source. At Dick's, they therefore modified some classic American drinks that originally called for rye. The Saratoga Cocktail is one such example. Scotch stands in for rye in this case, and to good effect! Scotch, Cognac, Vermouth and bitters work remarkably well (so long as you pick the right Scotch, Cognac, vermouth and bitters). After about 10 tries, we've got it just the way we want it!
