Monday December 26 through Friday December 30.
White truffles come from Alba, in the Piedmont region of Italy and usually arrive in early to mid November. Black truffles come from the Rhone Valley in France, and they arrive in mid-to late December. There are other truffles from other places, but these two are the rock stars. Nothing else compares to their heady, earthy aroma and taste. Whites are sliced razor-thin over a dish at the last minute. Blacks are generally put into a dish carefully (like under the skin of a chicken or game bird) to infuse their distinctive flavor and aroma.
There is often a special week or two when both Black and White are in season. This magical period starts next week. We're celebrating with the following tasting menu in Stage Left.
