We prefer to drink it. Champagne is a wonderful aperitif, of course; but you may not realize that a well-constructed Champagne dinner is an elegant, sexy, and delicious event. Some Champagnes are bright and clean. Some are toasty and warm. Some white Champagnes are made with still red wine added for a vinuous (winey) character; Rose Champagnes too!
Champagne is exact however and a Champagne dinner requires a more precise exercise of food and wine pairing than other category. There's nothing loosey-goosey about Champagne.
